In the email templates for the customer receipt and in the admin receipt, there is a reference to [[Order.TotalsAsTable]] . I would like to make a change to this section on these emails. Can anyone direct me to where this is constructed?

The TotalsAsTable token is something that's created in the server-side code. There currently isn't a template for it. There has been some interest in the past to make it a template, but it never received enough requests to make it into the roadmap.
