Need to add 5 lbs to shipping charge when a perishable product is added to the cart. They add a dry ice pack, so 1 to ∞ perishable products - add 5 lbs. How might one do such a thing?

It sounds like you could use the "Extra Ship Fee" field for any perishable products.
